ABC Soup

This recipe came from an old, old copy of Cooking Light magazine.

1-28 oz. can stewed, chopped tomatoes, undrained
11 oz. chicken broth (use less salt in recipe if using bouillon cubes for broth.)
1-16oz. bag frozen mixed vegetables
1-16oz. corn
1/2 tsp salt
1/2 tsp dried basil
1 tsp ground black pepper
3 TBSP uncooked alphabet pasta (whole wheat, if possible)
1 cup cooked chicken or turkey, cut into bite-sized pieces

In a large pot, add everything EXCEPT the pasta and chicken. Stir well. Set over medium heat. Bring to a boil. Add meat and pasta. Reduce heat and simmer for 25 to 30 minutes, covered. Yields approximately 9 to 10 cups. Can be frozen.  

Corn bread goes well as a side for this dish.
