Taco Quiche

6 soft corn tortillas, warmed
1&1/2 cups ground meat, cooked, drained (cooked, shredded chicken works well also)
6 oz. Monterey Jack cheese, shredded
4 eggs
1 cup cream
4 oz. can mild green chilis, undrained
1/2 cup salsa
3/4 tsp. salt
Dash pepper
2 tsp. taco seasoning, divided

Preheat oven to 350 degrees.

Grease pie plate (I use Pam). Layer warmed corn tortillas in a circular pattern on the bottom of the pie plate.

Sprinkle the meat and the cheese on the tortillas. Sprinkle 1 tsp. of the taco seasoning on the meat and cheese. Set aside.

In a bowl, whisk together the eggs, cream, green chilis, salsa, salt, and pepper. Pour over the meat and cheese. Sprinkle remaining tsp. of taco seasoning over the top. It looks pretty ugly at this point, but will puff up and look wonderful when finished.

Bake at 350 degrees for 30 minutes. Remove from oven and let rest 10 minutes before serving.
